Call me a copycat, but one of my favorite healthy go-to meals (or snacks) is lettuce wraps!  I love them…from chicken Caesar lettuce wraps to fajita lettuce wraps, they’re fulfilling and healthy…but this one is out of this world delicious and tastes (even better) than the real deal PF Chang’s Lettuce Wraps in my opinion.

My hubby and I used to be ‘foodie’ people—meaning eating out foodie people.  But then last year, we had our amazing daughter and realized how much easier (and healthier) it is for us to eat at home.  So I started getting creative and finding some of our favorite meals and recreating them at home and doing all I can to reduce the fat, calories and make them clean eating for us.  This one, I swear, is one of my best make-overs (AND icing on the cake for those of you who follow our Healthy Grocery Shopping List at The Breast Cancer Charities of America— CLICK HERE TO DOWNLOAD – many of these ingredients are on there!  And ginger in this recipe is SUCH a wonderful natural ingredient with so many health benefits for breast cancer prevention and to help ease after-treatment side effects.)

Start off with one pound of lean all-natural ground turkey breast.  Spray your pan with a little Pam spray to prevent the meat from sticking (with lower fat meats, they tend to stick more easily to your pots/pans…making for one heck of a clean-up.  But rather than adding oil/more fat to the meal, simply spray your pan with an anti-stick baking spray.  Works perfectly!)

Brown the meat and add in one large chopped onion.  Next, add the garlic and the remainder of the ingredients listed below (holding off on the cornstarch until just before you’re ready to serve).

Allow all the ingredients to simmer together for a while, stirring every now and then.  I like to let this simmer on low for at least 30 minutes to blend the flavors together.  About 10 minutes before you’re ready to eat, mix up the cornstarch with any of the liquid ingredients you feel it needs more flavor of—vinegar, soy—or simply mix it with a dash of water to allow the cornstarch to dissolve.  Add to the entire dish and continuously stir for about 5 minutes.  This addition will help thicken up the sauce so it doesn’t run everywhere when you load up your lettuce cups.

Serve with a bowl of lettuce cups and then voila…this dish will impress the whole family!  Protein packed, low fat and delicious!


  • 1 lb All-Natural ground turkey

  • 1 large onion chopped

  • 1 can (80z) diced water chestnuts

  • 3 cloves minced garlic

  • 2 tbsp Soy Sauce

  • 1 tbsp White Vinegar

  • 1 tbsp pureed ginger (typically you can find this in a bottle near the minced garlic)

  • 1/4 cup Apricot jam

  • 1 tbsp of Siracha

  • 1 tbsp of Cornstarch mixed with more vinegar, soy, or water

  • 1 head of butter lettuce
