5 Easy Low Carb Recipes…

Low-carb recipes don’t always have to be just meat and vegetables, though if you search for any low-carb meals on Pinterest or google, that’s about all you will find. One thing I’ve learned over the years of hoping on and off the diet train is – you shouldn’t deprive yourself of carbs and you shouldn’t be afraid to consume carbs. Doing this often leads to you binge eating all the junk and carb food filled you can get your hands on. Instead, focus on incorporating smart carbs in moderate portions! Smart carbs (like fruit, whole grains, and beans) come filled with fiber, protein, and other nutrients and stretch any carb count you get into a much healthier option.

Burrito Zucchini Boats

These are so simple and quick to make and taste delicious! You can also switch it up and swap out the ground beef for ground turkey or shredded chicken! Pair it with low fat sour cream and salsa and you’re set!

Ingredients

  • 3 zucchini, halved lengthwise
  • 2 tbsp olive oil
  • kosher salt
  • black pepper
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 lb ground beef
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/2 cup black beans
  • 1/2 cup cherry tomatoes, chopped
  • 1/2 cup corn
  • 1 cup shredded chedder
  • 1 cup shredded Monterey jack

Directions

  1. Preheat oven to 350 degrees. Score zucchini and scoop out insides, and save them for later. Place zucchini haves cut side-up into baking dish and drizzle 1 tbsp olive oil, season with salt and pepper. Bake until zucchini is bright green and is just beginning to soften, about 10 minutes.
  2. In a large skillet over medium-high heat, add oil. Add onion and insides of zucchini and cook until soft. Stir in garlic and cook until fragrant. Add ground beef, breaking up meat and cooking until no longer pink. Then drain the fat.
  3. Stir in chili powder, cumin and paprika, salt and pepper. Stir in black beans, cherry tomatoes, and corn.
  4. Spoon mixture into zucchini then top with cheese. Bake until zucchini is tender and cheeses are melted, about 15 minutes. Enjoy!

Chicken Parmesan Stuffed Bell Peppers

OK, these bad boys are hands down one of my favorite dinners to make! I’m always for meals that you can whip together and throw in the oven to cook. If you’re looking to switch it up, try using poblano peppers! They give this recipe a little more of a Mexican style vibe but nonetheless still mouthwatering good!

Ingredients

  • 3 cups shredded mozarella
  • 1/2 cup freshly grated parmesan
  • 3 cloves garlic, minced
  • 1 1/2 cup marinara
  • 1 tbsp chopped parsley
  • pinch of crush red pepper flakes
  • kosher salt
  • 12 oz fresh or frozen breaded chicken
  • 4 bell peppers, halved and seeds removed
  • 1/2 cup chicken broth

Directions

  1. Preheat oven to 400 degrees. In a large bowl, combine 2 cups mozerella, parmesan, garlic, marinara, parsley, and red pepper flakes and season with salt and pepper. Stir until combined, then gently fold in cooked chicken.
  2. Spoon mixture into bell peppers and sprinkle with 1 cup mozerella
  3. Pour chicken broth into baking dish and cover with foil
  4. Bak until peppers are tender. Uncover and broil 2 minutes
  5. Garnish with parsley and parmesan cheese

Ingredients

  • 2 small heads cauliflower, cut into florets
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cup whole milk
  • 2 oz cream cheese, softened
  • 1 1/2 cup shredded cheddar
  • kosher salt
  • black pepper
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup sliced green onions

Directions

  1. Preheat oven to 350 degrees. In large pot of salted boiling waterm blanch cauliflower for 3 minutes. Drain and squeeze cauliflower.
  2. Make cheese sauce – in a large skillet, melt butter. Add garlic and cook until fragrant, then add flour and stir until gold. Add milk and bring to low simmer, add cream cheese, whisking until combined. Remove from heat and stir in 1 cup cheddar until melted. Season with salt & pepper.
  3. In baking dish, add drained cauliflower. Pour cheese sauce and stir until combined. Stir in all but 1 tbsp of cooked bacon and green onions. Top with remaining cheese, bacon and green onion.
  4. Bake for about 30 minutes.

Buffalo Chicken Lettuce Wraps 

I’m a huge fan of anything that incorporates buffalo sauce! These wraps have been a go-to staple of mine for years! if you’re in a rush to get food on the table, try buying rotisserie or pre shredded chicken to use instead of boiling your own! It’ll cut down your prep time by about 30 minutes and it still taste just as delicious!

Ingredients

  • 2 tbsp unsalted butter, melted
  • 1/3 cup hot sauce
  • 1 tbsp honey
  • 2 cup shredded chicken
  • kosher salt
  • black pepper
  • 8 large butterhead lettuce leaves
  • 2 stalks celery, chopped
  • 1/2 cup crumbled blue cheese
  • 1/4 cup ranch dressing
  • 1 tbsp finely chopped chives

Directions

  1. In a large skillet, melt butter. Add hot sauce and honey, stir to combine. Add chicken, stirring occassionally until warmed throughout and coated in sauce. Season with salt and pepper.
  2. Arrange the lettuce on a plate, spoon chicken mixture into the lettuce leaves and top with celery and blue cheese. Drizzle the lettuce cups with ranch dressing. Garnish and serve.

Pineapple Bun Burgers

If you’re looking for a fusion of flavors then look no further! These burgers are a huge hit especially during get togethers! The pineapple paired with pepper jack cheese really does the trick and you wont regret whipping these up!

  • 1 lb ground beef
  • 1 tbsp Worcestershire sauce
  • kosher salt
  • black pepper
  • 8 pineapple rings
  • 1 large red onion, sliced into rings
  • 4 slices pepper jack
  • 4 pieces romaine
  • 8 slices cooked bacon

Directions

  1. Heat grill to medium-high. In large bowl, combine ground beef and Worcestershire and season with salt and pepper. Form into 4 patties.
  2. Grill patties, pineapple, and red onion until charred. Top burger patties with pepper jack and cover grill to let melt.
  3. Top bottom pineapple bunswith lettuce, burger patties, bacon and grilled onions. Then top with pineapple bun.
