5 Recipes to Change Up Your Everyday Chicken


Here are 5 healthy chicken recipes to help spice up your everyday dinner menu

My favorite dinner always includes chicken! I have and always will be a lover of chicken, especially in nugget form. But since chicken nuggets are not exactly on the healthy adult menu I should be eating, I’ve started meal prepping to ensure that I am eating healthier and more nutritious diet. But cooking the same old chicken can become really boring, really quickly. And once I get bored of something, I tend to push it aside and opt for something much more fattening and unhealthy.

Thus, started my search and experimenting with different chicken recipes to keep my taste buds on their toes. One of my go-to favorites is the BBQ chicken recipe, but I’ll let you and your taste buds decide for yourselves which recipe is your favorite! Take a peek at these 5 different ways to change up your everyday chicken.

  • Ingredients:
    • 4 pounds of chicken breasts
    • 3 cups BBQ sauce
    • 1/3 cup brown sugar
    • 1/3 cup apple cider vinegar
    • 1 teaspoon onion powder
  • Instructions:
    • In your Crockpot, whisk together the BBQ sauce, ACV, brown sugar, and onion powder
    • Add your chicken breasts and make sure they are well coated in the BBQ sauce mixture
    • Cook on low for 4 hours
    • After the chicken is done cooking, shred chicken breasts using 2 forks
    • Place shredded chicken on a whole wheat bun and wa-la!

  • Ingredients:
    • Sauce –
      • 2 ½ tsp sesame oil
      • 1 tbsp finely minced garlic
      • 1 tbsp finely minced, peeled fresh ginger
      • ½ cup low-sodium chicken broth
      • 1/3 cup honey
      • 2 ½ tbsp soy sauce
      • 1 tsp rice vinegar
      • 1 tbsp cornstarch
    • Chicken –
      • 1 ½ lbs boneless skinless chicken breasts, diced
      • ¼ cup cornstarch
      • 2 large egg whites
      • ¼ tsp salt & pepper
      • 3 tbsp vegetable oil
      • 1 tbsp white sesame seeds
      • 3 green onions
      • Cooked white or brown rice
  • Instructions:
    • For the sauce –
      • Heat sesame oil over medium heat in a small saucepan. Add garlic and ginger and sauté 30 seconds. Stir in ¼ cup + 2 tbsp of chicken broth, honey, soy sauce, and rice vinegar. Bring to a boil. Meanwhile, in a liquid measuring cup whisk together remaining 2 tbsp chicken broth and 1 tbsp cornstarch until well combined. Pour into simmering sauce mixture and allow to boil 1 minute, stirring constantly.
    • For the chicken –
      • Mix together cornstarch, egg whites, salt, and pepper until well blended and slightly frothy. Add in chicken and toss evenly to coat. Heat 1 ½ tbsp. vegetable oil in a 10-inch non-stick skillet over medium-high heat. Add half the chicken and cook, turning pieces occasionally, until cooked through and outsides are golden brown. Transfer chicken to a plate and repeat with remaining chicken.
      • Return chicken on the plate to the pan with other chicken, add sauce and toss evenly to coat. Sprinkle with sesame seeds and green onions and serve over rice.

  • Ingredients:
    • 4 boneless skinless chicken breasts
    • Olive oil
    • Garlic powder to taste
    • 1 lime
    • 2 tbsp honey
    • 2 tbsp McCormick Grill Mates chipotle powder seasoning divided (1 tbsp for sauce & 1 tbsp for rubbing into the chicken)
  • Instructions:
    • Heat oil in a large skillet over high heat
    • Rub the chicken with olive oil, season with salt & pepper, garlic powder, and 1 tbsp Chipotle powder seasoning
    • Reduce heat to medium and place chicken in skillet, cook for about 5-6 minutes on each side
    • While chicken is cooking mix juice of the lime, honey, and the other 1 tbsp chipotle powder seasoning
    • After chicken is done, place it on a plate and brush with the honey chipotle mixture. You can serve it with your favorite side of veggies or mashed potatoes.

  • Ingredients:
    • 1 ¼ – 1 ½ pounds of boneless skinless chicken breasts
    • ½ tsp of salt & pepper
    • ½ tsp of EACH fresh chopped rosemary and dried oregano
    • 1 tsp fresh thyme
    • ¼ tsp cayenne pepper
    • 1 tbsp minced garlic
    • 3 tbsp fresh lemon juice
    • 3 tbsp olive oil
    • 1 tbsp red wine vinegar
  • Instructions:
    • Combine salt, pepper, rosemary, oregano, thyme, cayenne pepper, minced garlic, lemon juice, olive oil and red wine vinegar.
    • Place chicken breasts in large zip lock bag. Pour the mixture on top of chicken and shake until evenly coated. All the chicken to marinate for 10 minutes – 2 hours (depending on how strong you would like the flavor)
    • Preheat grill to medium-high heat. Place chicken breasts on grill, cook the chicken 5-6 minutes per side and serve!

  • Ingredients:
    • 3 chicken breasts
    • 1 jalapeno, sliced
    • 3 tbsp lime juice
    • 1 tbsp extra virgin olive oil
    • ½ tsp cumin
    • ¼ tsp red pepper flakes
    • Salt and pepper to taste
    • Cilantro
  • Instructions:
    • Mix together lime juice, olive oil, cumin, pepper flakes, salt & pepper, 1 slice of jalapeno
    • Place the chicken breasts in a plastic bag and pour marinade over chicken. Refrigerate for 2 hours.
    • Heat skillet over medium heat and cook chicken 7 minutes on each side
    • Remove the chicken and serve immediately garnished with jalapenos and cilantro
