Backyard grilling, beach blanket picnics and poolside relaxing…pretty much sums up the fun of summer. Lots of family time, lots of Vitamin D time (of course, with sunblock) and lots of time for fresh summer meals the whole family will enjoy.
Summertime is one of my personal favorite times of the year to cook as the fresh produce is in abundance. Many people will think of summertime as hamburgers and hot dogs on the grill with chips and dips, but today I’m sharing five of my favorite healthy summer recipes that the whole family will love!
Healthy Summer Recipes
Have you ever tried grilling fruit? If not, you’re missing out! It’s SO easy, healthy and delicious. My favorite fruits to grill are: pineapple, peaches, watermelon and bananas. Being that all of these fruits are in stock currently, simple slice them up, spray them with olive oil cooking spray and throw directly on the grill (if you’re afraid of the fruit falling through, just lay a piece of aluminum down on the grill first and grill on top!) So delicious any time of the day.
My family LOVES watermelon. I mean, we can eat a watermelon in one weekend with just three people! I found this marinade recipe (note: I do use low sugar jelly or organic jelly to be a bit more conscious on the sugar content) but to use this for chicken marinade before my husband grills it, AMAZING!
Lemon Blueberry Cheesecake Bars
Back to my fresh fruit obsession, we have some AMAZING blueberry farms here in Texas where you can pick your own blueberries. Well when you pick 10 pounds of berries, you better have some amazing recipes to follow. This one is a favorite of mine…it’s a healthier twist on a lemon blueberry cheesecake. (Seriously, you won’t be able to eat just one…that’s the problem!!)
BBQ Chicken Bowls
All the foodie ‘fads’ right now are about ‘bowls’. Quinoa bowls, rice bowls…basically a twist on a salad. So the other night I whipped up this salad/bowl (I added some organic quinoa to the recipe) and oh my gosh was it delish. Also, the avocado ranch dressing recipe that they have in the recipe is amazing and uses Greek yogurt to keep it healthier too!
Tomato Basil Avocado Salad
This recipe makes you look like a professional chef. I love to make this one for dinner parties as you can serve it as a side dish, or as an appetizer using cute toothpicks to serve it with. The blend of all the flavors tastes just like summer in a bowl!
