Zucchini Boats: My Husband’s Favorite Meal

My Husband’s New Favorite (Easy & Healthy) Dinner

  

Ladies, if you’re like me, when my husband says he loves a meal, guess what, it gets added to the weekly meal plan—especially when it’s not only healthy but easy too!  So welcome to my secret recipe for Easy & Healthy Stuffed Zucchini boats.

Let’s just say this, the first time I made it, not only did he rave about it, but he was bragging about it to his mom, sister and our friends when we were out to dinner the next night (THAT’S when you know you had a ‘winner winner chicken dinner’!)

When I found this recipe, it was really basic at first.  Knowing that my hubby would want a kick to it, I put my own twist (and added protein) to turn it into a one stop shop dinner. 

 

Stuffed Zucchini Boats-(J’s favorite)

2 Zucchinis

1 chicken breast cooked/chopped

1 tsp of jarred jalapenos (or more if you like it super spicy)

2 Tbsp of fat free sour cream

2 Tbsp of fat free cream cheese-softened

6 Tbsp of shredded cheese (any type; I’ve done it with both mozzarella and cheddar, both are great)

Panko Bread Crumbs

Preheat your oven to 400 degrees.  Wash the zucchinis and cut in half.  Core out the middle of the zucchinis (I used a melon baller to get in the middle).  Once clean, place in a pan and mix together all of the other ingredients EXCEPT for the bread crumbs.  Stuff the center of the zucchinis with the chicken/cheese and jalapeno mixture.  Top with an ample amount of bread crumbs.  Bake in the oven for about 20 minutes.  During the last 5 minutes, put under the broiler on low to crunch up the top a bit.  NOTE:  These things are HOT (temperature) when they come out of the oven.  I suggest cutting them in half to cool a bit otherwise you’ll burn your mouth (take it from me!)

A time saving tip that I suggest, for the chicken that goes into the recipe, cook it with your dinner the night before or use leftovers.  I typically use a mild seasoning on the chicken that I use in this recipe, but having that portion already done, really makes the meal prep minimal on this. 

This is an easy meal that you can also simply double to make as a great entertaining dish.  The other way that we’ve served this up is by cutting them into bit sized pieces and serve as an appetizer.  They’re only good when they’re warm, but are definitely a hit at a wine and appetizer party too!
