My Favorite Lunch Recipes

 

If you ask our Finance Manager, Stephanie, what I eat, she will make fun of me for “only eating red food” – think chili, strawberries, bell peppers, really anything with tomatoes. I also am a big fan of meal prepping, so she gets to see the same “red food” all week.

Cooking over the weekends and grabbing each of the portioned out containers every morning during the week is the definition of easy lunches. Everybody has their own opinion about meal prepping but I have never had a problem with eating the same thing every day for a while. It keeps you on track to eat healthy for the whole week when your co-workers *cough* looking at you iGoPink team *cough* tempt you to eat out. So here are some of my favorite meal prep lunches to make your week as easy and healthy as possible!

I can’t take credit for any of these meals or pictures – I’m a newbie to cooking. Each of the recipes are sourced to the original link and I put my little tweaks to the recipe in the notes! You’ll notice pretty quickly I am a fan of spicy food (if you aren’t then just ignore my tweaks and listen to the experts).
