I have a confession to make, a sin for a Southern woman even: I can’t cook. Like, not at all. Spaghetti is the extent of my skill and even sometimes that’s touch and go. I’ve had the same roomie since I was 18, and she’s literally kept me alive (thanks, Em). She cooks dinner and makes our lunches, and I am ridiculously spoiled, I know. BUT before you start pointing fingers, I bring some things to the table (not literally of course, since ya know, I don’t cook). I’m a great cleaner; I’ll vacuum, do the dishes, dust, windex, you name it, and I do it pretty much weekly if not more frequently. I also have a love for home design and decorating for all holidays big and small, so Emilie gets to reap the benefits of a decorated house for free! We both have our strengths.
This has worked out perfect for the past 5 years, but now we’re kind of adults and moving on to new stages of life. Emilie decided she wants to be closer to the city (which is Houston for us) and my boyfriend, Ryan, will be moving from San Francisco and closing the gap between our 2,000 mile distance! We’re all so excited about these changes and busy packing and moving currently.
My coworkers were joking the other day about how they’ll have to make me casseroles since I don’t cook, and though Ryan can get by, he isn’t exactly Bobby Flay. While I love this idea (seriously please make me food colleagues), I felt it was finally time to figure it out myself because apparently one can’t live off of spaghetti and pb&j. Who would’ve guessed.
Here’s my first easy recipe that anyone, even me, can do! I actually got this off of Pinterest, so I can’t take all the credit.
Brown Sugar & Garlic Chicken
10 cloves of garlic minced
1/4 cup of olive oil
1/4 cup to 1/2 cup of brown sugar
8 boneless skinless chicken breasts
What you’ll do:
Saute the garlic in the olive until golden, then add the brown sugar until it is a slight paste over medium heat. Remove from heat and spread over chicken breasts placed in a greased glass pan. Season with salt and pepper. Cook at 500 degrees for 30 minutes (I’ve also heard of a lot of people cooking at 400, totally depends on your oven!).
