All throughout my childhood I was the absolute pickiest eater. I didn’t want anything unless it was chicken nuggets, PB&J or chocolate milk. Healthy diet, right? As I grew older my taste buds changed and I finally decided to incorporate healthier foods into my diet. I vowed I would never eat tomatoes, onions, mushrooms, or bell peppers. I’m now a 22-year-old and proud to say I eat all of the above now. Like a real grown up LOL (Except for tomatoes. YUCK).
I have a new-found love for bell peppers. About 6 months ago I decided not to pick them out of my food and I never knew what I was missing out on until that day! Aside from all the delicious recipes you can use them in, they have awesome health benefits! With just half a cup of chopped red or yellow sweet peppers you get almost DOUBLE your daily needs of Vitamin C (green ones also contain tons)! The huge amount of Vitamin C found in bell peppers have benefits that include protection against immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease, and even skin wrinkling. I dread taking pills, maybe it’s a mental thing where I just freak myself out, but I’d much rather up my intake of yummy bell peppers than taking a pill each day!
