The Best of Bell Peppers Two Easy + Delicious Recipes to Whip Up Tonight!

All throughout my childhood I was the absolute pickiest eater. I didn’t want anything unless it was chicken nuggets, PB&J or chocolate milk. Healthy diet, right? As I grew older my taste buds changed and I finally decided to incorporate healthier foods into my diet. I vowed I would never eat tomatoes, onions, mushrooms, or bell peppers. I’m now a 22-year-old and proud to say I eat all of the above now. Like a real grown up LOL (Except for tomatoes. YUCK).

 I have a new-found love for bell peppers. About 6 months ago I decided not to pick them out of my food and I never knew what I was missing out on until that day! Aside from all the delicious recipes you can use them in, they have awesome health benefits! With just half a cup of chopped red or yellow sweet peppers you get almost DOUBLE your daily needs of Vitamin C (green ones also contain tons)! The huge amount of Vitamin C found in bell peppers have benefits that include protection against immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease, and even skin wrinkling. I dread taking pills, maybe it’s a mental thing where I just freak myself out, but I’d much rather up my intake of yummy bell peppers than taking a pill each day!

Why would you not eat a food that is great for your health and taste delicious no matter how you prepare and eat it? Check out a few of my favorite ways to incorporate bell peppers into my diet.

Potatoes O’Brien  

Holy moly these are one of my favorite breakfast or brunch sides. I first discovered this wonderful dish while out at brunch at a local café. This is a super simple and delicious recipe! I’m not sure how I never knew about this dish up until just a few months ago. I follow this step by step recipe I found on the all wonderful Pinterest, as usual, lol. My family loves this as a breakfast side and I love making it!

Ground Turkey Stuffed Peppers   

These are a recent favorite dish of mine and I won’t lie, I could eat them at least 4 days a week and not be tired of them. What I love most is you can add your own spin! There are tons of ways you can switch up this recipe. I’ve become a little obsessed with watching those quick how-to tutorials on Facebook from Tasty or Buzzfeed. I came across this recipe and went to store directly after!

I’ve come a long way with acquiring a new taste for foods I vowed I would never eat. One day I hope I can grow to love tomatoes, but let’s be honest I’m not really betting on that happening! If you’re like me and waited until you were 22 to try bell peppers you better get on it! Even if you think you won’t like it, in the words of my dearly beloved Yo Gabba Gabba kids tv show that I used to watch “Try it, you’ll like it! I tried it and now I like it!”
